If you’re not sure how to tell when your sausage is done, don’t worry—it’s easy to learn. The first thing you need to know is what kind of sausage you’re cooking. Raw sausage should be cooked to an internal temperature of 160°F, while precooked sausage only needs to be heated through to 140°F.

To check the temperature of your sausage, insert a cooking thermometer into the center of the sausage. If it’s a raw sausage, you’ll want to cook it until the thermometer reads 160°F. If it’s a precooked sausage, cook it until the thermometer reads 140°F.

Once you know what temperature to cook your sausage to, you can use one of several methods to check whether it’s done. The most foolproof method is to use a cooking thermometer, as described above.

Another method is to cut into the sausage to check the color of the interior.

Raw sausage should be cooked until it’s no longer pink in the center. Precooked sausage can be a bit harder to judge, but you’re looking for an even color throughout.

If you’re cooking sausage on the grill, you can also use the “bounce test.”

Gently bounce the sausage on the grill—if it springs back, it’s done. If it leaves an indentation, it needs to cook a bit longer.
