If you’re lucky enough to have an abundance of purple hull peas, you may be wondering how to best preserve them. Freezing is an excellent option and relatively simple to do. Start by shelling the peas and discarding any that are discolored or damaged.

Rinse the peas and spread them out on a baking sheet lined with parchment paper. Freeze the peas for 2-3 hours, or until they are solid. Once frozen, transfer the peas to a freezer bag and label with the date.
